The recipes I have tried so far have been great but I wish time frames were given for both the prep time and cook time. Since they are not given I suggest you completely read all the directions for a recipe you are thinking about before starting so that you don't run out of time or end up eating at a late hour. There is also an extensive amount of information about eating healthy and what to look for when shopping. It's a lot to remember and will take some time getting used to. I live in a small town so it is not always easy finding the healthier substitutes suggested but what I have found has made a difference.

I would agree that parents should decide what their kids eat. As you said, though, it's really important for parents to understand how important nutrition is. I need to get in a better habit of giving my kids more healthy snacks throughout the day: celery with peanut butter, fruit, yogurt, etc. In talking more about our kids healthy, I wanted to pass along this Mom's Guide to caring for kids teeth. It has great ideas on how to keep our kids teeth healthy. I hope you find it helpful too. http://www.1dental.com/moms-guide/

Guidelines are fine, but I think education and help to the parents out there who don't know how to make cheap healthy food is the way to go. As long as food stamps can be used to buy potato chips and cookies as well as beans and rice, we will have a hard time addressing this issue.

In our family we have always done meatless Fridays- a holdover from my husband's Catholic upbringing, but now just a good idea. We have found some our favorite dishes in our search for non-meat based dishes and it has given our children a chance to explore beyond the typical meat-based entree.
